I use pecan. It's a hickory and the smoke leaves a good taste in everything I've tried. The wood should be seasoned and not too green. It's plentiful and can be found practically everywhere. I don't know about bags of chips. I own a pecan grove so wood's not a problem. There's always down limbs and the occasional whole tree that needs felling. Split wood works best. (fortunately I've got a hydraulic splitter) Too much bark can sometimes leave a bitter taste.

The chunks are best, you don't have to soak them. The chips have to be soaked and even then you have to keep adding them every 30-45 mins, which lets the heat out.
