Hi. Starting to think about private schools and most are religious schools. We are not Christian and
wondering which of the private Christian schools are the most accommodating and open
to non Christians. I also want it to be academically challenging. Prefer for it to be north of northwest highway and south of 121. Thanks!

You will find non-Christian students at all the major private schools. You'll probably want to avoid the Christian schools that ask detailed questions about the family's faith & testimony on the application (Providence comes to mind), but those schools won't accept you anyway so it's a moot point. ESD, Parish, Good Shepherd, the Catholic schools, etc all have students from many faith backgrounds.

Just FYI - my school (TCA in Addison) requires at least 1 parent to be a Christian. See below:

Other similar Christian schools will ask you to agree to their statement of faith.

As TC80 said, the best options are usually either Catholic schools or non-sectarian schools, as they have students of many faiths.

Even if it's a good school, I'd caution against sending children to conservative Christian schools as a non-Christian, as the worldview presented will probably be diametrically opposed to your beliefs and your children will be attending Christian chapel, Bible classes, etc.

You mentioned North of NW HW & South of 121. You might look into JPII at the HS level in Plano and at the Elementary & MS level, Prince of Peace Catholic on Plano Pkwy.

Go Episcopal (any of them) if you aren't a churchgoer. Definitely don't bother with Trinity Christian Academy, I know that much.

I would avoid the catholic schools. There are plenty of top private schools (St. Marks, Hockaday, Greenhill, DaVanci, Alcuin, Lamplighter) that are not religious/overly religious.
