So true regarding mint! Put it in a container and forget about it. Very easy and nice for mojitos.

We 1/2 acre with all raised beds. Plant three times what you would like to harvest as wildlife is very hungry. Consider soil. You will have to bring it in unless the previous owner of your property was a gardener. Look into utilities. How much water does a tomato cost?

Google Neil Sperry
Container gardening for best water use and take advantage of sun location
You can use plastic bins w soil added
Just add drain holes for rain

Do you have fence?
If so bugs/birds more issue than animals like rabbits most of time
You can grow tomatoes but some do better than others

Actual vegetable gardening from season to season is an art, and it does take some attention and learning...and you make mistakes and learn from those hoping to do better the next season. Planting some small fruit trees is easier and it sounds like you have some land to do it on. Well, planting them correctly isn't the easiest, but the upkeep is easier. The fruit (LOL, no pun intended) of your labor is worth it.
