I don't know about trimming it down, but we've had ours for 3 years and it hasn't gotten much bigger. It stays in a pot outside and is dragged inside when it gets below freezing. I brought it in the entire first winter and found that to be unnecessary. (And my kids played in the dirt)

You could also look at online nurseries for other options.

I ordered myer online and talked to the lady selling them at length about its care.
I think it'll be a few years before it'll be hard to move it in and out of the house, but I keep it inside.

I'm in NY, and have a Meyer lemon. It goes outside during the warm weather and comes inside under plant grow light in the cooler and winter months.
It's about 4' tall and I trim it back after it fruits have matured, picked and before it will flower again. I get about 25 lemons a year. I'm not sure it is the exact proper procedure, but it works.
Get a roller platform to move it around, it makes it so much easier.
They are supposed to be Hardy to 20°, but around 40 it seems to deteriorate, so I would not trust it to survive at 20. That's how I lost the first one I tried, left it outside in fall when temp dropped to 40 at night.
I've also got a dwarf orange and a dwarf banana plant, both do well inside where it is kept at 65 during the winter with 60% humidity by humidifier.
They have a southern sunny window and the plant grow light.
I have not had much success with my dwarf pomegranate trees, so after one more try I will probably give up.
The bananas are hard to overwater, so they suck up lots of water. The others get watered twice weekly as the heat in winter dries them out quicker, hence the reason for the humidifier.
Good luck but do get a roller platform, it makes transport easy.
If I can grow them in cold NY, you should have success in TX, even when the cold North winds blow your way.
