Default east texas catholics (kemp, terrell, wills point)?

we're looking to get back to texas and want to know what the catholic communities are like in the towns east of dallas. we're especially looking at kemp, terrell, and wills point, though we're not limiting to those towns.

i know that there are catholic churches in these areas, but what are they like? are they vibrant, strong, lots of young families, etc.? or struggling to fill a pew with mostly senior citizens? (not hating on the senior citizens, here folks. i love 'em! some of my best friends are aarp members. i even have an old neighbor.)

I know some folks who go to the Catholic church in Terrell. They attend the Spanish language services. They are a big extended family though. All ages. Very family oriented.

I would google the different churches and see what their schedules look like. It's important to know before you go. When we were transferred to Tyler a little over a year ago we checked into the options that we had ahead of time.
