Highland Park Cafeteria in East Dallas near Buckner and Garland Road - Casa Linda Shopping Center.
My faves: smothered steak, tomato aspic, pumpkin bread..

Rosa's and Springcreek BBQ are cafeteria as well.
Is it me or does there seem to be a lot of buffet style dining here as well? Not knocking it, just an observation

think OP is referring to buffets like Luby's--Highland Park is independent and usually gets good reviews in TX Monthly when they refer to it--Luby's is chain and their outlets vary in quality---the one in Bedford in Mid-Cities has slipped in the years we have live here and gone to it---really not very good now...
There is Luby's in Grapevine that is better...don't know about the ones in Dallas area...

Luby's in Plano is pretty good.
I use to love Highland Park when I was a kid but it is just too far out for me now.
Furs in Richardson on Beltline/Preston area, use to be pretty good for cafeteria. I think it is still there.

While it is not meat and veggies cafeteria style you MUST eat at Mama's Daughters Diner. OMY.... heaven. Get there early and order your slice of pie at the same time you order your meal or else they could be out of your favorite. They have several locations now. This place is an institution. The typical "meat and three" is found here.

If you are looking for good BBQ I personally love Marshalls in Farmers Branch. There is one in north Carrollton too... but the original is the best in my opinion.
I also have heard that Ricks is good in Carrollton off the Geroge Bush/and Trinity Mills. I've not personally tried them but I see cars there all the time.
