I know Denver/Boulder is the mecca for outdoor activities and sports, and also has the lowest obesity rate amongst its citizens. But how far does that stretch into everyones diet and nutrition when it comes to meal time?? I'm doing some basic research in the hopes of opening a healthy take-out restaurant, serving organic foods, whole wheat bread, etc. etc. What have you guys seen in your areas and neighborhoods when it comes to this concept?? Are there any restaurants like this? Are they busy? I've done lots of demographic and number crunching research, but it's always best to get peoples opinion when it comes to what they like to eat and their observations from their day-to-day quest of having a great meal.

Thanks a lot in advance for any input/advice you have.

There are a few. I definitely think that there is a market for something like this. Most of the options are for sit down. Here's a few local ones.

I think someone who opens a fast serve deli/shop doing gluten free would be very successful.

I agree. Along those same lines, a menu that has options for people with other food allergies such as dairy, soy, corn, eggs, etc. would be much appreciated in Denver.
