Absent a snowstorm along I-80 while enroute, it's a lower elevation drive with easier grades to pull going up and down the mountain passes compared to the I-70 route. Less scenic and some long distances between towns across Wyoming, but an easier drive overall. You'll be able to turn North from I-80 on the Eastern side of the hills from SLC, so you get to avoid the SLC metro traffic.

I've also gotten stuck in Utah in the Sevier-Cove Fort area when the rest of the route I-70 to I-15 was pretty wide open. The pass there is not very high after the Colorado passes, but it gets seriously snow packed and icy very quickly with a minimal amount of snowfall.

I'd echo jazzlover re WHP speed patrols. I've recently seen a lot more patrol enforcement along I-80 between Cheyenne and SLC, and have been actively using my GPS to back up my speedo reading. I've seen cars go past me when I was at 75 mph by about 3-5 mph faster than me, and then passed them as a black and gold trimmed WHP cruiser had them pulled over. WHP likes to position their radar units just at the crest of hills when you're looking into the sun, so you can't see the cruiser but they can see you and activate their "instant on" radar units to get a speed reading.

Be careful with late Fall travel, as that's when the temps and conditions have turned favorable to rapidly moving storms icing up the roads. WYDOT's web site is pretty good about updating road conditions and will link you to the adjacent states.
