Default Easy answer

1. Find a good Mexican restaurant. Good as in tasty food.
2. Make sure it serves booze.
3. It should seat 40+ and have a bar.

Or, you could go to an Irish pub as some of them will also have Cinco de Mayo celebrations.

El Camino - Highland - Denver, CO (large bar to table ratio, will be packed)
Pinche Taqueria Highland - Highland - Denver, CO (trendy, tasty and crowded)

I went to Margs in Cherry Creek last weekend and had a great time. Lots of awesome margaritas and the chips and salsa and tacos were really good. I'm sure it'll be packed though!

Really?

Denver hosts one of the largest Cinco de Mayo celebrations in the United States downtown at Civic Center Park.

While not everything there is going authentic Mexican celebrations or food, there will be plenty for you to enjoy, including several stages with Mexican entertainment (dance troupes, bands, etc.), a parade, a Mariachi Mass on Sunday, lots of Mexican food (many restaurants will have booths), and more.

Take Light Rail to 16th St. Mall. Take mall shuttle to Civic Center Station. Walk out and enjoy the party.
