I think the suggestion of a food truck is a smart one. Lower start up costs, you get to travel around town and see what area works best, and when you decide to open up a brick and mortar restaurant, you have an established customer base.

Yes, that's correct. We're considering Washington and Portland too.
Currently we both are living in Singapore, working here. We will fly to New Mexico soon in Feb where my parents in law are living, this is why our trip will start from Colorado since we have to pass Colorado to drive to WA, OR.
But we are soooo in love with Colorado, especially my husband. He never stops talking about Colorado, especially how nice and beautiful it is.
So we were thinking if we find a real good place in CO, let's just settle down there.

I know it's super tough to open new restaurant, but we're ready to do this!
So our hope is at least to get some location information before our research begins.

It's kind of Burrito, but you can slightly add Asian taste here.! It's not Sushi, though. Taste is more western, but cooking is more Asian style. I wish I could show some samples, but for now, still working on it!

So, please! if you have anything in mind, let me know.!
