I think retail stores should be closed on Thanksgiving but I feel that restaurants serve a necessary function. Some people aren't in a position to cook or host a celebratory meal, and might not have friends or family that invite them to their home. Or in some families, the best way to handle it is by going to a restaurant so no one has to be responsible for hosting.

And as Himain noted, many servers and staff are happy to work that day and earn money and are able to schedule their own family activities around their shift - sometimes the restaurants have more limited hours so that helps to make sure the staff get some time with their own families while still being able to accommodate the public.

This is from last year but I would guess most would be open again this year
