First and foremost - you might want to read this. These are the legal requirements you must follow if you want to open a restaurant.

Opening and Running a Restaurant

Indianola is a fairly small community of about 15,000 people, so the lack of a Japanese restaurant does not surprise me. Most ethnic restaurants in small towns are usually Chinese and Mexican, you'd have to go to a bigger city for most other national flavors.

The one thing you have in your favor is that Indianola is a college town, so because of that fact alone your odds of having a successful restaurant are a bit higher than in a small town without a college. In addition, Japanese cuisine - while not *quite* as familiar to the American palate as Chinese and Mexican - is still fairly easily found so you'll probably have more luck than say, a Peruvian or a Thai restaurant where they are not very common, especially in central Iowa.

What kind of restaurant are you planning to open? A sushi bar doesn't require a lot of space, and will probably be a hit with the college kids. That's probably your best bet right there. If you want to utilize hibachi grills, that's probably going to be more expensive to operate - you will need both lots of people and lots of space to make it worth your while.

Anyway, I hope this helps. Good luck.

There will be sushi bar ,kitchen teppan-yaki(include seafood and steak grill), tempura(Japanese fried food) and noodle served in the restaurant. at the start people might feel strange about Japanese cuisine . in the oppsite way I think they also desire something new come to the quiet place.
