For those of you with diabetes or cooking for a diabetic, what are the best simple foods that you prepare? What snacks do you enjoy?
Cooking is down the list of things I enjoy most. Between having diabetes (Type II for which I take a low dose of Metformin) and having to work on my cholesterol, I need to expand my kitchen repertoire of legal foods. I'm getting tired of chicken breast, fish, veggies/legumes, fruit and nuts.
My once daily tests (alternating morning and evening) are usually between 90-120.
So do you have some palate-pleasers that I might try? I miss potatoes, pasta, rice and chips with my salsa. What would make a good substitute?
When the weather is better, I like a grilled steak. All the fat burns/drips off. I also like tofu if it's done right, mixed in w/something spicy so it soaks up the flavors. I eat eggs a lot, omelets or just scrambled. Cottage cheese for breakfast (high protein). Bananas, seasonal fruit in moderation.
I just started the South Beach diet on Monday so I'm in phase 1. I'm going through a major carb detox right now and I'm tired. I'm keeping things simple with salads with lean proteins on top, using a very low carb pita bread and eating fillings with eggs for breakfast, lunch meat and laughing cow cheese and avacado and veggies for lunch, and taco fillings for dinner. I don't eat it for every meal but I eat them a lot. I'm sure as soon as the detox is over I'll get more creative with my cooking. If I crave something sweet I eat sugar free jello with whipped cream on top or a fudge pop.
Anyway, it's been working. I regularly had sugar readings in the high 300s. Now they are in the 100s. They still need to come down some but they seem to be coming down everyday. The only thing is that the detox sucks. I can't wait until it's over.

IMO this is the best diet for diabetics. I've been on the SBD for about 7 months and I've never felt better. The first two weeks can be hard though.
I made a crockpot roast this week using sweet potatoes and nutmeg.
Although I do not eat them that often, I have really grown to love sweet potatoes and yams. I used to only eat them when they were candied or were in a pie. Now I use them in many recipes requiring potatoes.
You could also make sweet potato chips and fries if you're craving potato snacks and side dishes.
Eating whole wheat pasta on occasion should be ok as long as you don't eat over a single serving. What I usually do is eat a half a serving of whole wheat pasta and give myself more meat sauce.
