I hate raw spinach. It coats your mouth with something weird. I don't particularly like spinach. Give me arugula any day. I like all of the bitter greens and lettuces: frisee, radicchio, endives. I also like watercress, pea shoots, mizen, and tatsoi. Kale is not my favorite raw - it needs to be massaged. And I should not have raw kale often due to thyroid issues anyway.
Romaine actually has decent nutrition, and should be subbed for romaine 9/10.
I also like cabbages in salads for extra nutrition. Napa cabbage is a great lettuce substitute. But it is also on my list to limit in raw preparations.
Darker greens are better. In lettuce and cooked preparations. You also absorb the nutrients better with both vitamin C and fats, so pair your greens with both for the best nutrition. Tomatoes, bell peppers, and citrusy dressing are all good ideas.
I tend to prefer my greens cooked and load up on cooked kale, chard, broccoli raab. I also like stir-fried cabbage and asian greens.
