Here's what I'm making tomorrow:

Great vegan snack: Cowboy Cavier

2 ripe avocados diced
1 15 oz can black beans rinsed and drained
1 15 oz can black eyed peas rinsed and drained

1 bell pepper diced (I used half a green and half a red, but color doesn’t matter)
⅓ cup red onion diced

⅓ cup Cilantro finely chopped

DRESSING
⅓ cup olive oil
2 Tablespoons red wine vinegar
2 Tablespoons lime juice fresh preferred
1 teaspoon sugar (or equivalent organic stevia)
½ teaspoon salt
½ teaspoon pepper
1/4 tsp garlic powder
Tortilla chips for serving

That actually sounds pretty good.

Enough water... I'm drinkin' a Diet Coke!!

At midnight:
Champagne mini bottle
Shrimp ring

On the menu tomorrow:
Bacon, eggs and low carb toast.
Mozzerella sticks wrapped in prosciutto
Crustless pizza

In other words, the usual low carb stuff.
Back to the 600 calorie fast on Wednesday & Friday!
