Here's a BBC article giving the good and bad about nitrates in our food. Seems like their bad rep may not be as bad as it's been made out to be.

Nitrates were always brought up in connection with hot dogs, along with rat feces and cockroaches. No thank you. I'm not about to eat anything like that. Or ham, in any form, or any other animal product for that matter. My body is not a trash dump.

I'm not clear on the relevance of your post to the OP, but since you mention it, you might be slightly dismayed to learn that rat droppings and insect parts are also present in vegetarian food.

There are nitrates in rat droppings?

1. The post was intended to educate people about them since they are always brought up in diet threads, especially low carb diets.
2. You don't have to constantly remind us you don't eat meat. Many of us do and it is perfectly healthy to do so. In no way does it make our bodies "trash dumps".

I tend to stay away from nitrates because they are found in foods high in sodium.

Nitrates happen to be naturally occurring in vegetables. Celery comes to mind but there are others.

There is no good.
