This is what I make every day and take to work for lunch.
Spinach mixed with Romaine Lettece (buy big bag of each and take them out of bags and mix them together and put in a freezer bag in the refrigerator (it stays fresh longer)
Then I cut up or slice and add:
1 low fat string cheese
grape tomatoes cut in half
celery
broceli
pickled okra (didn't used to add okra till I moved to the south)
pineapple tidbits
imitation crab meat
hard boiled egg
sometimes I substitute the crab with chipolte chicken that is baked and diced (buy it frozen from a meat company)
Always use those spritzers spray on dressing.
I have a salad a day or I feel like I am missing something.
