My puppy is 5 1/2 months now and I am reading that it is a general rule of thumb to switch when the dog becomes 1 year old. But I am also reading that 6 month might be better for non-large breeds.

My puppy will probably become 30-40 lbs as an adult. She was 21 lbs 2 weeks ago.

Anyhow, my local pet store is having a rare sale and I am going to stock up on her food so should I get Orijen or Acana dog food or stick with Orijen puppy food?

Stocking up is Not a good idea. For 1 how do you know the dog is going to like it? 2nd I would Not switch till the dog is 18 months- 2 years old.
