I would say the best way would be to talk with people in the fields you are interested in. They are VERY different from what the professors tell you. Often times there is a need for "cross over" jobs, that combine a couple different expertises, skillsets, and knowledge from two different realms. This is especially prevalent in smaller companies where they cannot afford to hire a huge staff.

The OP is posting because he or she isn't aware of what fields exist, beyond the traditional ones. Before anyone can interview people, one needs some ideas and suggestions of what fields to consider. The OP is trying to think outside the box, but doesn't know where to begin.
