Because in a contested convention, Cruz wouldn't be chosen either. The GOP establishment hates him too. Just not as much as they hate Trump. Cruz's only chance is to straight up win the delegates in the primary/caucus process.
It depends on which GOP establishment. Bob Dole likes Trump better than Cruz.
