How do entertainers get beyond anxieties to perform?
Are they just so confident to begin with or does it just get easier with time? Do they never get passed their anxieties?

You said it. They perform in spite of their anxiety. There are quite a number of celebrities who've spoken of their shyness or discomfort in front of audiences--Johnny Carson and Diane Keaton immediately come to mind. There are many more.

Your question probably has 10,000 different answers. Some people, be it a celebrity or just a guy speaking at a trade conference, are naturals and have no qualms about performing in front of people. Others are anxious and learn to deal with it.

I'm by no means a celebrity but I used to play quite a bit in a bar band. There was one bigger venue we played a few times and I definitely had nerves. For me the nerves would evaporate after playing the first few notes and then it would just become fun.

What I dont understand being shy myself is why anyone with an acute nervous stress puts themselves in these situations or want to be in them at all.... but I do believe many actors singers etc are shy or stressed too........it seems Elivis was a bag of nerves before going onstage.. and always worried about being taken over by other singers...
