Good thread idea.
I picked Croatia and would try to live some place like Dubrovnik. It's adjacent to Italy and I'm sure it would have the same coastal climatic patterns as those of Adriatic Italy.
For ease of language, I would pick Romania (the least spoken of the Romance languages), but I think the decline in QOL and culture shock would be more than I would want to handle.

Some of the countries in the list are actually in Central Europe.
From the list, I'll pick Czech Rep. & Slovenia.

Agreed as A Canadian I would choose it because of the deep love of Hockey
The Czech men's national ice hockey team is the national ice hockey team of the Czech Republic. It is one of the most successful national ice hockey teams in the world.
Czech Republic is a member of the so called " Big Six", the unofficial group of six the strongest men's ice hockey nations, along with Russia, Sweden, Canada, Finland and the United States.
Czech Customs:
Sitting in pubs and drinking Czech beer such as Pilsner Urquell, Budějovický Budvar, Gambrinus and Kozel.
Czech people like to have barbecues in the summer.
Pointing at someone with their index finger is considered rude.
Often take shoes off when entering a house (guests are offered "pantofle" which are house slippers)
Playing ice hockey.
Czechs, who live in big cities, often go to their 'summer houses' during the warm months of the year.
I mean Czech people like to drink beer at the local pub and BBQ in Summer and love Hockey..Sounds alot like living in Canada..
I think I could fit in their culture but would have alot to learn in terms of history values and since I never been to Eastren Europe and I am not sure how Canadians are viewed over there and would have to learn more about Eastren Europe to really make a choice.

I liked Romania best of all of them, but that was nearly 50 years ago and things might have changed. But one of the principle advantages of Romania is that the language would be easiest for an English speaking person to learn.

Some of the roads haven't changed at all!
I spent 2 weeks driving around last year. It was beautiful and the people were great.
The language is a Latin variant from what I could tell.
I listen to the language for the first day and it was discernible with my high school Latin.
I was quite surprised.

Even though it's in Central Europe, I'd choose Slovenian. Mainly because it's small with a lot of outdoorsy stuff to do and my family is from there.
