Obviously this will vary from country to country, but which language would be most widely understood throughout the whole EU?

After English? hmm, not really sure:

I'll go with German, French, Spanish, Italian and Russian (I know Russia is not in the EU, but I think the older generation in the former Eastbloc-countries still has a knowledge of that language - the same goes for German, which was a mandatory subject in many former Eastbloc-countries).

You're asking two different questions. The language that will be most widely understood throughout the EU is not necessarily the most useful language to learn.

Overall, I would say Russian (Eastern Europe), French (Southern Europe) and German (North and Central Europe) are the most widely understood languages apart from English.

Isn't Spanish considered the easiest language to learn(excluding English) among Europeans? My father took German while in college and he mentioned that learning grammar was very difficult.

I find German grammar really easy but vocabulary a bit hard due to the lack of rules to make plurals and genders :\
