Islam doesn't know this religiously sanctified separation of church and state. Throughout European history, there's been a struggle between the church and the state, even in medieval times. Eventually, this led to the scientific revolution and the age of enlightenment.
So yes, Christian culture, on a deeper scale, is significantly different from islamic culture.
I personally wouldn't mind seeing Turkey and Morocco joining the EU. Turkey is already a part of NATO despite it being nowhere near the Atlantic. If their troops are any indication of the country as a whole, they fit in with the EU and US troops perfectly.

Morocco won't be joining the EU as they are definitely in North Africa.

If you are meaning French Guiana, that is part of France, not a sovereign country.
As much as I enjoy Turkey (been there many times, speak some of the language, many aquaintances there); I do not think they would be a good fit for the EU. I also do not think a few current EU members are a good fit for the EU.
But I doubt it will happen anytime soon. The EU countries are reluctant to accept a new member with a majority Muslim population (despite the country being secular since the 1920s).
And other reason is because the Turkish government refuses to admit that the Ottoman Empire committed genoicide on the Armerians and having issues with its neighbors.

It is the European Union. An African country would be ineligible to join. Countries like Turkey can join because they have a small percentage of their territory in Europe. The only reason a territory outside Europe would be in is because they are overseas territory of a European country. Most of these territories also have limited rights within the EU.
Morocco applied to join the then-European Communities on 20 July 1987. The application was rejected by Community foreign ministers as they did not consider Morocco to be a European country and hence could not join.
