It's Comunitat Valenciana, PaÃs Valencià or L'Antic Regne de Valencia. Levante is an invented name by Franco Regime to denominate a region under which were also including the Spanish speaking Murcia and Albacete, doesn't exist anymore. People there is quite sensitive about that.
The donkey is only the symbol of Catalonia. People from Valencia, proud of speak Catalan, do not consider themselves as Catalans, but Valencians, and reject the idea of the Països Catalans, so there you can still see the bull erected along the roads.
In fact, one of the bulls remove in Catalonia is erected in Valencia's Fine Arts Faculty as a representations of Spanish culture:
