there are some good authentic Mexican restaurants in spain (especially in big cities like madrid, seville...) but there is also a lot of rubbish mexican restaurants. There are not so many tex-mex restaurants that it is what most americans are actually getting when they think they are getting mexican food.

Yes I understand the adaptation part, that is understandable. But Mexican food is very similar to Italian food in that it uses very basic ingredients and the key is freshness. Staple foods are corn, squash, tomatoes, onions, chiles, avocados, meat. Even tortillas are easy to make, you just need to learn. The Mexican food I had there was really weird. Lol
Maybe things have changed(hopefully) since I lived there, which was more than 10 years ago now. Maybe they now have more authentic places.
I forgot about hot chocolate and churros! Another Spanish favorite.

Of course, I love the different sausages, hams, olives, bread, wine, cheese. My favorite Spanish cheese is Cabrales, but it's hard to find it where I live now.
I love gazpacho, the cheese, the hot chocolate, and the wine. Excellent.
As for the rest, not for me.
