DEFINITELY see the Plitvitsa Lakes park; it's a World Heritage Site. Plan to spend at least a couple of days there. I think there's a hotel near the park, otherwise you have to stay in the nearest town/village. It's worth it!

Krka National Park was very nice. It was a beautiful drive (very scenic) and the walking trails and waterfall was relaxing and beautiful. Still close enough to Split for some nightlife too.
There are 8 natioanl parks in Croatia and I visited all of them so maybe this would help.
So you have: Brijuni, Plitvice, Krka, Mljet, Kornati, Paklenica, Risnjak, Velebit.
I live in Rijeka, which is a main transpot center, seaport (it is somehow like center of Croatia, although its not a main nor the largest city) so it is quite convinient to stay in Rijeka and every day visit one of the parks except Mljet and Kornati.
Brijuni, Risnjak, Paklenica, Velebit and Plitvice are really easy to go to (from 30 minutes to 3 hours drive, Plitvice is 3 hours and Risnjak is cca 30 minutes) and all of them are beautiful in their own way. Mljet and Kornati are islands so it is a bit demandig to get there and of course cost a little bit more, but are beautiful and if I may suggest, the best way would be to rent a boat and enjoy it at its finest.
I am not sure how long would your trip take and what is your budget, but the best way would be to stay in Rijeka for a week or 10 days to visit parks and then rent a boat with skipper to take you sailing and visit Mljet and Kornati, you will not regret, believe me.
Also, if you are low on the budget, for example, from Rijeka you can get to islands like Krk, Cres and Pag within 30 minutes to 1 hour (by car or catamaran), which are also beautiful.
Of course, you can rent a car here and go by yourself, ask someone to take you if you're insecure driving in foreign country or take organised trips, although, I am not sure it is possible everyday, so your schedule should be very well planned.
