Browsing around this forum and thought I'd post an idea you may like.

With a little preparation, this will make a great high protein snack and easy to keep in the fridge/freezer.

crustless quiche cupcakes

*Get a cupcake pan, spray with pam.
*Select and cook the meats you would like to add to the quiche..ex) turkey, chicken or turkey bacon, etc.
*Mix your egg whites/eggs (whatever you prefer).
*Add in cooked meats
*Add any veggies you like ex) tomatoes, bell peppers, onions, mushrooms and a little cheese

Put into oven at 375 for 30 min. Test with a toothpick/knife to make sure it comes out clean, then they are ready.

I place these into a tupperware container and grab some to go and place into a ziplock as I'm on the go.
You can eat them at room temp, cold or even reheat.


Also, I travel on the road quite a bit for my job so I always have a supply of bagged nuts on hand. They keep well in the car!


Another quick tip is meat roll-ups. I'll spread hummus on lunch meat (read your labels>>) and roll up and stick into zip lock bags. GRab on the go.

One more is to microwave pepporoni pieces until crisp. Then you have chips!

As you can tell most of this requires some prep work but once you have it done, it's great.

Raw nuts, I use to make a tuna cake W/ a tblspooon of pancake mix and wheat germ mix w/eggs or egg white add green sliced onion, some shredded cheese/or shredded zucchini and tuna and seasoning make, grill like pancakes. GoTexan has the same idea.....so many variations

Chicken breasts are usually pretty easy to carry around in a ziploc bag or whatever and aren't too bad cold. Same with cold cut sandwiches. Single servings of milk are good too.

that is great you have to fight to keep it on. i did once upon a time long long ago (in chicago in fact). but years of civil servant jelly donut coffee and pasta potluck have made me what i am today. a guy that has to fight all the time to keep it down.
