The best t shirts on the market bar none is found at J.C.Penneys in their St.Johns Bay line. These can be bought with or without a pocket but overall I've not found a better t-shirt for the money spent. Oh yes, I live in t-shirts year 'round.
You might also try Target's Merona brand. I have the same fit issues you do and needed a couple cheap tees for a weekend beach getaway. I have no idea how well they'll last, but I loved the fit of the Meronas.

I have generally had pretty good luck with Merona stuff over the years (womens). I was crushed a few months ago when my sweater I bought in 2004 had a hole in it. I think I spent $10 on clearance for it.
I had a similar problem to yours, until I found the right fit. I wear a hanes tagless v neck, the come in colors, I am 6 ' and 200 lbs, with a small gut, but medium build. I always used to buy the xl, as to hide my heavier times, but always felt sloppy as heck. It was worse with button down formal shirts, as I have a 19 collar, but a size 17 fit.
I always found a good fit with Russel, hanes, polo classic fit, lucky brand,nike dri fit, but you are on to something. this new athletic fit is for a skinny athlete. Some of this clothes fits like Juniors or something.
do realize, some clothes makers of "youth, younger" clothing do make their clothes for a lighter crowd.

Why can I not find simple long and short sleeve shirts that fit properly?
The SS t-shirts seem to all be made to fit anorexic hipsters. I try on my size, and the sleeves barely cover my shoulder. I try the next size, and it's still tight in the chest but hangs below my butt. I like shirts to come within a few inches of my elbow.
I'm not a big guy. I'm 5'9 and 160 with a fit frame and larger than average shoulders and chest.
The long-sleeve shirts are either huge or slim.
