If your grandfather is like my dad was before he died at 94, it won't matter what color it is. The fact that you thought of him and took the time to actually go out and get him a shirt is what would matter.
What does the OP do with all his pink izod shirts when they wear out? I'm kind of thinking the backyard is lined with little pink headstones where they've been ceremoniously interred.
ie: "Bleeding Gum Pink"
Spring 2013 - paint the kitchen day September 9, 2016
"Gummy, we hardly knew you"
You know a couple companies make them in those colors.
Izod of course.
The OP is getting hit pretty hard. But I have to say when I read "Grandfather" and "pink" in the same post I cringed as well. I'm not even bothering to look up absinthe green.
I think you are on the right track with golf shirts, I've got a closet full as well but wear them often. But I think you need to get out of the Izod mode and branch out. The new fabrics that wick away the perspiration is a must, especially in PR. Hopefully your previous shirts were made of this material. Under Armor is a good brand, a more neutral color like navy blue is probably a safer play.

Ditto - my father and grandfather would never wear pink in a million years. Like the previous poster said, go with one of the new wicking fabrics especially in a hot climate. If your grandfather is more dark complexioned I would go with blue, but nothing too dark as it will retain heat.

Two of the shirts (the Fairy Tale and the Absinthe Green) are IZOD Advantage Polos, which are a 60/40 cotton/polyester moisture wicking blend.
