Well I guess my life is complete, now that I've learned about the various fabrics that can be used in polo shirts. It's amazing that I've somehow survived well into adulthood without knowing this crucial information...
I wear men's small's for work because a) it's a uniform of sorts, and b) my work requires a lot of physical activity and I like the longer length. I also wear them playing polo. Since we get assigned teams we end up with "one huge size must fit all." Us smaller ladies have come up with creative ways to make those work.
If having to wear polo shirts often is the worst thing that happens to me, I'm doing okay.

It's quite difficult to see the difference on a computer screen except if the photo is very high resolution. If you see them in person you can easily see and feel the difference. Pique has a mesh texture, while interlock has a soft and smooth texture.
I wear long sleeve polo shirts during the winter season. I prefer pique. I think it breaths better than interlock. For that reason, I avoid the performance material. I once wore a Nike Tiger Woods polo shirt. It just didn't feel comfortable.
As for short sleeve polo shirts, I still own 10-15 pique shirts. Most are white. I stopped wearing them a few years ago. They're just too heavy.

As for seasonality, my favorite brand sells their hybrid pique/performance polos year-round, although in different colors for spring vs. fall (with five colors - black, white, red, medium-light blue, and navy blue sold in both seasons). However, their interlock polos are only sold with their spring collections. As for their traditional 100% cotton pique polos I haven't seen them market them since 2016 due to the popularity of their hybrid pique/performance polos. Amazon still seems to have them available (although it could just be remaining stock), so I am not sure if they are discontinued or not.
