I like the look of a nice light pink interlock polo, but I wonder if an interlock polo in a dark or neutral shade would look out of place.
Because fall/winter tends to be about colder weather clothing so there's less prominence for t-shirts, polos, swim trunks, or shorts.

It's a polo shirt. It looks fine in all colors. If you prefer lighter colors, wear lighter colors. Skin tone and just personal preference are factors. Personally, I think pastels look horrible on me so I avoid them. I'm pretty sure most people would agree. I used to have a very light moss green polo I liked. But I had a tan then. After not wearing it for years I found it in the back of the closest only to be horrified at how awful it was. It wasn't girl friend approved either. Either it always looked awful and I just wore it to death anyway or more likely it just looked awful with my Grade A cave mushroom tan.

And as to why most fall-colored polo shirts are pique, I guess the reason is because pique in general is more popular than interlock.
