Ft. Desoto (at the southern tip of St. Pete), like the previous poster mentioned, is a great spot - if you are good in a sea kayak, there are lots of little islands to explore. If you go in the late fall, or early winter - it's an awsome place to go wind surfing! Also, there is a national or state park just south of Amelia Island (can't recall the name of it - great place to go kayaking, though)
There was some decent camping around Wekiva Springs and Rock Springs in Central Florida. I believe Blue Springs and Deleon Springs borders the Ocala National Forest and have some nice camping spots. Of course the Ocala National Forest itself is quite a large area to explore.
Personally, I like camping near one of the springs (crystal clear water to swim in) or near the beach.

Someone just told me about Ginny Springs this morning. In addition to the usual camping, you can also go tubing in 72-degree water (which is wonderfully refreshing in 95-degee summer heat!).
Whatever you do, DON'T summer camp in Sanibel. The no-seeums are horrid that time of year, and bug repellants won't help.

I would not revisit Blue Springs. Just returned from there. Horrible!!! There is a train just on the other side of camp that you would sware is coming through your campsite & it runs probably 5-10 times a day & doesnt care if it is themiddle of the night. Pets are allowed which is nice but some people are sensitive to the fact your dog may bark for the first 10 min if you leave it crated in your camper. The rangers are nice & the bathrooms were ok but the campsites were so small we had a hard time with our pop up fitting on the site & not being too close to the fire pit. We still ended up with it 3 feet from our screen room. The Spring area was only ok to me. I highly prefer Weeki Wachee (not sure if they have camping), Alexander Springs, Salt Springs (when it is reopened it's currently closed for renovations), Homosassa Springs or Ginnie Springs if your are interested in the water. These are the only ones that I have visited thus far as far as the springs are concerned. If you want peace & serenity then Blue Springs is not it. I have not camped at all the others but we have visited the springs there & they are phenominal. Good luck!
