I don't plan on any water activities as I can't swim so no issues there

I just want to get an idea of how cold the nights are in December?

The nights can get pretty cold sometimes. Usually the coldfronts that come through are random. I remember around two years a ago in october/november we had a heat wave where heat indices were well into the upper 90's and low 100's, and week and a half later we had highs in the 50's and lows in the 30's. That winter during the Disney Marathon it was in the teens and had sleet falling. Depending on the coldfront itself, and the frequency of them, the cold can last for days and even a few weeks. Which is why the averages never reflect those temperatures because one can't guarantee that it will be a certain temperature on a specific day. I'd definitely bring some extra layers if I were you. Its funny to see Northerners and Europeans here on vacation during this time period, because most get caught off guard and end up having to buy extra winter clothing already having so much back home.
