I am 42 live in CT (born & raised) w/ my 21 year old daughter. I have a MA in human services (marriage & family therapy) and am pursuing my license, & my daughter is a criminal justice major in her junior year. However, we are looking to move to the south before I get licensed in hopes for better job opportunities, as there are not much in CT at the present time. We also cannot stand the harsh winters here & the cost of living is outrageous! We want to move to South of Miami, and maybe close to the Everglades if we can. Does anyone know any towns in that area that is safe and affordable. Affordable to me would be maybe a 2 bedroom rent around $800-$1000 per month. If not maybe on the south west gulf side?

First, Miami is east of the Everglades. South of the Everglades is water, then the Keys.

Second, what on Earth makes you think there would be jobs close to the Everglades? The Everglades is a massive swamp.

You need to research the area, look at and apply to jobs, land some sort of job, then move. You're foolish to try anything else.

Your rental budget would not work anywhere near Miami in terms of desirable places to live. Look to the opposite coast (Gulf side) in the Fort Myers-Cape Coral-North Fort Myers area which has the same climate, is relatively safe, has a fairly low cost of living and possible job opportunity. A quick look on an apartment rental website shows 55 different options (apartments, townhomes or condos) for a two bedroom, two bath renting between $800-$1000.
