Cedar Key is a great, out of the way island off the west coast, west of Gainesville.
Micanopy is also a great choice. There are a couple of very nice museums in Gainesville along with the Devil's Millhopper Geological State Park. St. Augustine has a couple of neat forts from the Spanish occupation of Florida, the first school house, etc. You can tour the town in a horse drawn carriage and then have dinner at the beach. Have fun!

I live in Tallahassee, and I would say that there are a few awesome things surrounding Tallahassee that you would want to check out.

1. Wakulla Springs St. Park. Largest (by volume) freshwater spring in the world, It has swimming area, Boat tours, its pretty epic.

2. St Marks National Wildlife Refuge, Lighthouse, hiking trails, if nature is your thing,,

You have to eat the breakfast buffet at Nell's in Branford (Suwannee County), then walk down to the park on the Suwannee River and enjoy the scenery.
