Most restaurants now have gluten-free options or willingly substitute where needed. Publix also has a shopping list of gluten free items you can shop with:

If you're looking for breads you may have to do the pilgrimage to Whole Foods Market in Orlando. Breads freeze well and you can keep them on-hand in the freezer for months. You can also shop online. Food For Life which makes awesome whole grain breads has a gluten-free line they can ship right to you. http://foodforlife.elsstore.com/view...1-gluten-free/

*** I keep finding more options! The Fresh Market right there in The Villages carries Food For Life breads and I'm sure other gluten-free items.

Ok, thanks. I googled some more and found a couple of blogs written by celiacs dining in the area.
