Very true. I was at a Publix in Orlando and ordered a Cuban from their Deli. I didn;t expect it to be very good, but wanted one anyhow. They made it and didn;t even press it. I asked if they press their Cubans and the lady looked at me like I grew another head and told me no. I didn't accept the sandwich. Supposedly its a Cuban on French Bread.... lol.

Take a history lesson. Cubans were in Tampa long before they were in Miami.

The only Cuban I've ever had with mayo is right here in Tampa. Also, I am sometimes asked if I'd like lettuce and tomato. Every Miami Cuban I've had is mustard only. I like both versions, but prefer Miami style.

Publix is notorious for that, I once almost fell victim to the same scenario when I first moved down here, was craving one and saw they had them on, good thing is the woman was Cuban and told me they are were no bueno, and got my fix later. Publix also does not use roasted pork, I think they toss on Turkey from what I remember. The Publix down here have Cuban bread in the bakery, at least as of the past few years.
