Local Grouper
Is there a ban on grouper or not?
A few years ago, I was able to have a grouper sandwich whenever I wanted .
Now, in restaurants, it's either not available, really expensive or the
waitress informs me it's from China or Vietnam.
A place I just went to a few days ago claimed the grouper was fresh and local. I don't know if I can believe that but it was good.
And snook is never available for sale, correct?
Is snook really great tasting?

Grouper sammiches are at the Village Fish Market in Punta Gorda and they're mighty fine! Broiled of course

Snook is never legally for sale. I think its one of the best fish I've ever eaten.

You can thank the longline commercial fishery for decimating the grouper stock. Efforts have been made recently to ban longlining and go back to tended gear commercial fishing. IMO it's th eonly sustainable option.
Most grouper served now are from Central and South America. Plenty of fresh Florida grouper this time of year, but supplies dwindle in Feb and March which is a closed season (spawning season).
Snook is not, and will never, be sold. It's way too valuable as a gamefish and the stocks are precarious, though recovering.

Snook used to be called "soap fish" because people prepared/cooked the fish with the skin ON. Once the skin is removed... it is one of the "sweetest" tasting fish in Fla. Only Pompano tastes better... IMO.
In regard to Grouper, once you know what fresh caught actually tastes like..... there's no going back.

Broiled Grouper with Creamy Crab and Shrimp Sauce
INGREDIENTS
* 1/4 cup butter
* 1 1/2 cups heavy cream
* 1 teaspoon Creole mustard
* 2 (6 ounce) cans crabmeat, drained and flaked
* 1 (4 ounce) can small shrimp, drained
* 1 teaspoon Cajun seasoning
* salt and pepper to taste
* 2 pounds grouper fillets
* 1 tablespoon olive oil
* 1 lemon, juiced
* 1 teaspoon chopped fresh parsley
* salt and pepper to taste
Preheat the oven broiler. Cover a medium baking dish with foil.
Melt butter with cream in a saucepan over medium heat, and blend in Creole mustard. Cook and stir until thickened. Mix in crab and shrimp. Season with Cajun seasoning, salt, and pepper. Cook until heated through.
Place grouper in the prepared baking dish, and rub with olive oil, lemon juice, and parsley. Season with salt and pepper.
Broil grouper about 4 minutes on each side, until easily flaked with a fork. Spoon the crab and shrimp mixture over fish to serve.
Now that's good eat'in
