I am an Italian Chef and restaurateur and I would like to move to Florida. If you would be in my place, what would you do? You live in Florida so you know well the reality. What would you open? A restaurant, take away, a little Osteria, Italian Truck Food...what...

I think a take-away with Italian Market has some good possibility. Mazzaro's in St Pete and Doris's Markets in South Florida are examples of how popular it could be and areas like mine (Orlando) are lacking in what I would call traditional Italian markets or delis. Both examples I gave are quite large in terms of operation but I think a smaller deli with Italian specialties you can't find at the grocery store, along with a takeout menu of Italian sandwiches and some prepared dishes you can change up daily/weekly could be a good thing without the headaches of a full-service restaurant.
