I homesteaded in Texas, which meant filling out a piece of paper as I remember it. It was nothing and the State took care of all the details after I assumed a note to a home I purchased.
As I remember, my realtor told me to get down to the whatever official office and sign up IMMEDIATELY after buying which I did.

How difficult or easy is it to Homestead in Florida, please?

It's about the same, if it's your personal full time residence you get the Homestead deduction, here is a link explaining the process and Q&A's,
