Chicken Divan (Chicken, broccoli or whatever veggy you/he likes) Super easy.

I stir fry some cut up bite size pieces of chicken breasts.About a pound or so. Stir fry til pink is gone.
Make a 12 oz bag of frozen broccoli or califlower or a mix. Frozen corn or peas work, too. Cook frozen veggies in micro.
Open up 2 cans of cream of celery or cream of chicken, or cream of mushroom soup. OR a mixture of two listed. (I usually use celery & chicken). Heat with a couple Tblspns of butter & a 1/4 cup of mayo. Add chicken & cooked frozen veggy or veggies.
Put in casserole dish. Heat 350* for 25-30 min.

Make UR own bread croutons.
Toast about 4-6 slices of bread. Take scissors & cut toast (bite size or a bit larger) into cubes.
Melt 2/3 stick butter. Add bread croutons & toss to coat cubes of bread until butter is soaked into cubes.
Put buttered cubes on top of casserole dish. Bake 350* about 5-8 minutes until lightly browned.
YUM !!!! One of Hubby's favorites & it is so easy to make.

I made my famous (really) extreme quesadillas [aptly named because they're extremely awesome] once for a first date. We never went out again.

Make it simple. Meat and potatoes. Small New York strips medium rare. baked potatoes and a iceberg wedge salad. Stay away from garlic and onions on the first date if you get my drift. Maybe some shrimp on a skewer. You can make everything ahead of time except the steak and shrimp. Just toss on the grill when he gets there and thirty minutes later....BAM. Yeah make sure to get some wine just in case like "tucky" stated. That will be a good first test though to see if he shows up with some good vino.

I would make something that you cook very well. Then you don't have to worry how it's going to turn out. When I was dating a million years ago, the first dinner that I cooked was always spaghetti and meatballs with Sunday gravy. That's still the family favorite. It did not require me to stay in the kitchen and it was always a big hit. However, I would also consider using your grill. He would probably like to help you with that and that's always a good start. If he looks like he's never seen a grill, you can make your decision rather quickly. Have a good time and good luck! And I agree, he should be bringing the wine.
