For Dawn, tripas = braised small intestine of pig. Delicious, if a bit chewy.

Actually, I shouldn't say that I'm grossed out. I'm not. Us Jews like something called kishke, which is also intestine. http://en.wikipedia.org/wiki/Kishke_(Jewish_food)
