Debsi - that sounds wonderful! I found a recipe on a website that I am going to use. Involves bacon, chicken thighs, rice, cream of chicken, etc.... What I like the best is that I don't have to cook the bacon before I add it, brown the chicken or cook the rice! Just layer them all! Yay! I am cooking this tomorrow.

Tonight is still going to be a jambalaya rice mix and I will throw in some browned bulk sausage. A small salad too.

Crab meat sauteed in butter with lots of crushed red pepper then stir fried with fresh fettucinne and the last of the local tomatoes, diced. Made my eyes water it was so spicy.

DH went shrimping yesterday over at Ponce Inlet.....he brought back some really gorgeous shrimp!
I made shrimp scampi over WW linguine, salad from the garden, foccocia with parmesan and rosemary.
He also stopped at our favorite fishmongers in Ormond Beach and brought me pompano! -rubbing hands together in glee-

We tried the new hot pastrami sandwiches from Jack In The Box. Far from gourmet, (didn't expect it to be), and I'm sure way full of salt, fat & calories. We had a BOGO coupon though & shared an order of unsalted fries, so it was quick, cheap & easy.
