My version of Italian shepherd's pie. I gotta use up those potatoes!

Eta, I forgot I had an eggplant in the frig. I'd found a simple recipe for eggplant parmesan. I'm doing that tonight!

Leftovers. Cleared three different containers out of the fridge tonight, which feels great! It was a bit of a mish-mash of a meal but good. Small piece of veal with mushroom sauce for appetizer. Followed by a steak sandwich made from the leftover steak, on Turkish bread with Swiss cheese, crumbled blue cheese and arugula - toasted. And the third leftover was some asparagus and green beans, served on the side with some freshly squeezed lemon juice.
