I have oodles and boodles dried. I went a little bonkers planting this year.
I am gonna let this growth bolt to get the seed, and then start the whole process over again, thank goodness for fall growing season!
Anyway, I made pesto with farfalle and sundried tomatoes, roast chicken breast sliced over, and made some foccocia.
First time I have been able to bake bread in months, it is actually drying out here, and is cool enough to turn the AC off and open the windows!

Going to make this 3 ingredient tomato sauce that I've been reading about on the web forever. Such a simple recipe goes against my instincts, but everybody raves.

Last night we had carnitas with bell peppers, jalapenos, and onions. I served them in low carb pitas rather than on the tortillas I generally use. I put sour cream, salsa, and roasted eggplant & pepper hummus on them. YUM The hummus had a cuminy bean flavor so it was almost like putting refried beans on it. We had sliced tomatoes on the side. And we also had a salad made with romaine, assorted small tomatoes, and Annies Goddess Dressing

I'm thawing some kind of frozen pasta sauce, but i don't remember what it is, so we're having Pasta Surprise, salad and garlic bread.

Thanks Kshe! I just need more ideas and a variety I guess. It seems lately I'm bored with food--AGAIN. It doesn't help that I am feeling lazy about cooking..only been doing it for--well to many years! Ha! Maybe if I go through the recipe thread something will jump at me but for tonight we are having ham steaks, sweet potatoes and green beans. It's the time of year where the sweet potatoes are fresh here and huge and sooooo good!
