Actually didn't do leftovers as planned - (WELL - DH did), I had a shaved turkey breast sandwich on a hamburger bun - with extra mayo. Also a few nacho cheese doritos.

Last night we had slow cooker bbq beef short ribs with green chiles. This is a recipe from The Everyday Low-carb Slow Cooker Cookbook. My hubby had made it while I was out of town and my granddaughter devoured it so since they were coming he asked me to make it. She ate well again. hehe We also had mashed cauliflower and a salad with a lot of veggies in it. Tonight we will have green chile stew, tortillas, and a salad.

quiche with spinach, bacon, swiss cheese, and foccocia, sliced tomatoes on the side, yummy!
Today is going to be chicken burritos with yellow rice and black beans.
Florida is playing Tennessee at 3:30, so I gotta get busy early!

Not sure yet. I ended up making a pizza last night so I still have a few pieces of ranch steak that I need to use. So it's between:

Chicken spaghetti and garlic bread
Fried catfish and the regular sides
Steak tacos and rice
