This week's dinner selections will be, as usual, a potpourri of delicious items. It all begins this evening with a large bone-in ribeye steak and a baked potato (bacon bits, ranch, butter, and chives). Later on, I'll have some tilapia sandwiches, smoked sausage (ranch beans and sweet peas as sides), and grilled chicken salad.

Today, its Sunday fried chicken, mashed potatoes with roastic garlic and herb flavoring/ gravy, brocolli chesse casserole, and rolls.

I'm having a hard time with cooking now days. Technically there are two of us however my husband is on the road most of the time so it ends up being just me. I eat pretty simply and more heavily on vegetables when it is just me. I never know when he is going to show up so I need some recipes that are quick but are more of a hardy meal for the times that he comes home.


My typical meal for myself is grilled chicken, salad and sauteed broccoli or a lot of times I will just make a vegetable stir fry with jasmine rice.

Typical meal when my husband is home...he likes he likes steak, potatoes, stews etc.
