No I don't mess with it - eggs are so little and slimy anyway - it'd be too much of a hassle to deal with it. I do let all the snot drip out of the shell and then usually end up beating the eggs and cooking them through (and yes please to the picante sauce!) Even if they're sunny side up, I don't de-string them.
Do you do that even if you're baking with them?
I'd get that loogie out of there if I was just looking at the egg in the bowl and then throwing it away.
I was going to make a quiche for dinner, but maybe now I'll just order a pizza.

Let me say that its important to have a good relationship with any carry out food vendor so as to avoid any loogies in the food. But, at least with pizza you will never know.
I eat everything but the shell, and I wipe out the shell with my finger and get every drop. I lick my finger to make sure I get it all. I like some snot in my whites and all liquid yolk.
