We'll probably grill burgers and/or chicken. Potato salad and of course beans and home made hot salsa! I have to work so my contribution will be the chips and salsa.

Sure......here you go:

2 cans of black beans, rinsed and drained

2 cans of "fiesta" corn (corn with peppers), drained

1/2 cup (I use one small bunch) of scallions, sliced thinly

Mix in a large bowl with the dressing: 1/2 cup canola oil, 1/4 cup apple cider vinegar, 1/2 teaspoon (or to taste) of salt, and hot sauce to taste. Wisk together and then add above. Leave overnight in fridge, covered, to marinate and gently stir occasionally.

I also add some lime juice......

Before serving, fold in two diced tomatoes and two diced avocadoes, and some cilantro if you wish.

So, in addition to this, today we are having smoked brisket, three whole smoked chickens with different rubs, cole slaw, pasta salad, chips and salsa/guac, corn on the cob and lots of cold drinks!

Happy 4th of July!!

Default July 4th suggestions for grill time...

We are cooking out, and having some friends/family over.
I would like to try something a little diffrent, other than hamburger/ hotdogs.
Still would like to make the potato salad, etc...
